Spinach and Tuna Pasta by RiA

I got this recipe from allthecooks.com but the original recipe had just the spinach, since I have canned tuna left here at home, I decided to add it on this dish. It tasted so good! I'd like to share this with you.



These are the ingredients:
226 gr. - pasta noodles (supposedly fettuccine noodles but I used the spiral one),
226 gr - fresh spinach
1tbsp - garlic salt (mash garlic with salt)
1 cup heavy cream
1/4 cup grated parmesan cheese
2 can tuna flakes
pinch of nutmeg (optional)

Procedure:
Cook the pasta noodles (fettuccine or spiral) to a boiling water for 10 minutes or until the pasta is a little bit soft, drain. In a pan, stir-fry the tuna flakes until cooked, add in the garlic salt, heavy cream, nutmeg then mix the pasta and the fresh spinach. Sprinkle parmesan cheese on top.

This dish is very delicious and nutritious too because it has vegetables and tuna. This is good for those who are on a diet.

You can partner it with a garlic bread. Just toss a pan bread with a garlic mixture: heat the butter for a short time, just until it melted, put in minced garlic, salt and pepper and basil leaves.

Ground Beef Enchiladas by RiA

I got this recipe from allthecooks.com and since I have pizza dough left in our fridge, I used it instead of tacos or tortillas that is in the original recipe.


Here are the ingredients for this delicious dish:
2 lb. Ground Beef
1/4 cup onion
1 garlic clove mashed with
1/2 teaspoon salt or garlic salt
1/2 shredded carrot (1/2 to 1 cup)
1/4 cup water
2 tablespoon flour
1/4 teaspoon oregano
1/4 teaspoon cumin
1 teaspoon instant bouillon

Procedure:
Brown meat in frying pan. Add garlic, onion, carrot, oregano, cumin and instant bouillon. Stir until blended. Sprinkle flour on top. Stir in. Simmer until meat and carrots are tender.
I used pizza dough as the tortilla. I cut them in 4 and then filled them with the meat filling, rolled up tightly. Then bake in the oven for about 20 minutes or until brown.

If you want, you can also do other procedures for this:
For Tacos: Cook tortillas in hot oil, few minutes each side. Fold in 1/2. Drain on paper towels. Fill each taco with spoonful of taco meat. May use prepared shells.
For Enchiladas: Fill softened tortillas with meat filling and shredded jack cheese. Bake about 20 minutes.
For Chimichangas: Fill flour tortillas with meat filling, cheese and refried beans. Roll up tightly. Be sure to fold edges and sides. Fry in hot oil for a few minutes on each side until lightly browned. Top with salsa and sour cream.
For Burritos:Fill flour tortillas with refried beans, meat filling and cheese and roll up. Warm in microwave to melt cheese and heat through. Add desired toppings.
You can add a dip for it like I did. Just add mayo, ketchup, salt and pepper and milk or you can just eat it that way. This can be a substitute for a meal because of the dough, which is very filling. You can also use it as a side dish for a soup.

Classic Potato Salad by RiA

This is one of my favorites among my newly found recipes. Even my family loves it. I found this on "recipe" on my android phone here.

I did the exact thing and ingredients this time.



These are the ingredients:

1 cup mayonnaise
2 tbsp vinegar
1 ½ tsp salt
1 tsp pepper
4 cup cubed cooked potatoes (5-6 medium)
1 cup celery, sliced
½ cup chopped onion
2 hard cooked eggs, chopped

Procedure:
Combine the first 5 ingredients.
Stir in remaining ingredients.
Cover, chill.

This is super easy to do again and it taste great! I suggest you try this out now. Credits to allthecooks.com for this yummy recipe.

Cheesy Mashed Potato by RiA

I'll be sharing another side dish or merienda. I was about to make the usual mashed potato but thought of making it in a different way. This is so much easy to make and so delicious too. Here is how to make my cheesy mashed potato:


Ingredients:
Butter
Potatoes
Salt and Pepper to taste
Milk
Cheddar cheese
Parmesan Cheese for topping

Procedure:
Cook potatoes on a double boiler until it is very soft, then mash them. Add butter, salt and pepper. Combine milk until the texture is good enough for you. Put cheddar cheese and Parmesan on top for the finishing touch. You can put cheese wiz instead of the cheddar cheese to make it cheesier. :D

Chicken Teriyaki Kabobs by RiA

I got this delicious recipe from the application "recipe" on my android phone. I did the exact ingredients for the marinade but I added the tomatoes so it would be more filling.

Here are the ingredients for this dish:
680 gr chicken breasts, skinned and boned
White Onions, cut into 1 inch length
Tomatoes, cut into wedges
Marinate:
1/2 cup Soy Sauce
2 tablespoon Sugar
1 teaspoon Oil
1 teaspoon Minced fresh ginger root
1 clove garlic, minced

Procedure:
Cut chicken into 1 1/2 inches square pieces. Thread each of eight 6 inches bamboo or metal skewers alternately with chicken, white onion pieces (spear onion slices through side, not lengthwise) and tomatoes. Place skewers in shallow pan. Combine soy sauce, sugar, oil, ginger and garlic; pour over skewers and brush chicken thoroughly with sauce. Marinate 30 minutes. Reserving marinade, place on rack of broiler pan. Turn over and brush with reserved marinade until the chicken is tender.

You may also add fruits like pineapple or vegetables like bell pepper. You also can remove the chicken, tomatoes and onion and place them in the broiler if you are not comfortable in the skewers and to cook all of them easily. One problem with this dish is when it is in the skewers, the chicken may not be cooked entirely but the vegetables are well cooked already.

Fried Liver Dumplings by RiA

I got this recipe from the recipe application on my android phone. But I did not copy the exact recipe procedure. The original name of this is Liver Dumplings but because I fried it, I called this dish Fried Liver Dumplings.


Here are the ingredients and procedure on how to make this:
slices of dry bread
1/4 kilo beef liver - ground
3 large onion - finely chopped
3 eggs
1 tbsp salt
1 tbsp pepper
1 tbsp teaspoon nutmeg
1 tbsp thyme
1/2 cup bread crumbs
1/2 cup flour
Cooking Oil
Mayonnaise (optional)

Procedure:
Soak bread in water. Squeeze dry; crumble into bowl. Combine liver, onion, egg, seasonings, crumbs and flour with bread; blend thoroughly.
Form the mixture into oblong or circle shapes using a spoon. Dip fry into a frying pan with cooking oil. You may add mayonnaise on top for garnish.

The original recipe is boiled into water, mine is a little different but so delicious. You can invent the sauce for this dish. You can add garlic, salt and pepper and milk to the mayonnaise to serve as a dip.

Pancit by RiA

This is a famous dish for the Filipinos. I got this from our family's recipes but sadly I forgot to put the liver which would taste better. These are the ingredients for Pansit:
Pansit Bihon
Carrots
Baguio Beans
Cabbage
Pork
Chicken Balls
Soy Sauce
Salt and Pepper
Shrimp Stock
Pork Stock
Oyster Sauce (optional)
Cooking Oil
Onion and Garlic

Procedure:
Saute the onion and garlic, add in the pork (and/or liver) until it is soft and tender. Add in the rest of the vegetables and the salt and pepper. Then pour the shrimp and pork stock then the pansit bihon. Mix the soy sauce and the oyster sauce. Let it simmer for a few minutes and then it is done.

I didn't put on the measurements because it would depend on you. The more ingredients you have, the more it will taste good. I've put some oyster sauce to make it a bit sweeter. You can also add liver and sitcharo (instead of baguio beans). You can cook this for special occasions like birthday because they say that it will give you a long life. :D

Tortang Talong by RiA

This has been a family's recipe for a long time. I guess many of you already know how to cook this. To those who don't know it yet, I will share the recipe with you.

Here are the ingredients:
5-6 Medium to Large Eggplants
1/4 Kilo Ground Pork
3 Medium Carrots diced
3 Large Potatoes, diced
2-3 Beaten Eggs
Onion and Garlic
Salt and Pepper to taste
Cooking Oil

Procedure:
Grill the eggplants until it is cooked and soft enough to peel its skin. After you peel the skin, mash it with fork making it in a circular / oblong shape. Set it aside.
For the mixture, saute garlic and onions, then add the ground pork. Cook the pork for about 30 minutes or until it turns brown. Add in the carrots, potatoes and salt and pepper. Set it aside.
Get your mashed eggplants and add the mixture, one eggplant at a time. Put it in a plate so you can arrange it beautifully. Put the beaten eggs, enough to cover the whole eggplant. Then fry it.

If you noticed it, it takes a while to be able to prepare it because of the processes you have to do. But once you get the hang of it, it is quite easy. For the sauce you can add for this dish is soy sauce and calamansi. But for me, I love the japanese mayo and ketchup to go with it. :))

Mixed Vegetables by RiA

This is so easy to make. It serves as side dish for main dishes. I partnered it with my Burger Steak.
 
These are the ingredients for my Mixed Vegetables:
1 pack mixed vegetables (carrots, corn, green peas)
Butter
Nestle Cream
Salt and Pepper to Taste
Nutmeg (optional)
Fresh Milk (optional)

Procedure:
Melt butter in the pan, add the mixed vegetables. Stir them altogether until cooked. Add the spices, then the cream and milk to make it flavorful and creamy.

The original recipe was the butter and the mixed vegetables, I just added cream and milk and the spice to make it tastier.

Burgersteak by RiA

This is the very first dish that I will share with you. I have cooked just a few times when I was younger but it was once in a blue moon. :)) Now that I am obliged to cook everyday here at home, I will share the food I have done and prepared for the first time. This recipe was done by my late uncle. It was now my turn to do it.



This is a simple creamy Burger Steak. Here are the ingredients:
2-3 packs of Burger Patties (seasoned and prepared)
1 can of Button Mushrooms
2 cans of Nestle Cream
Salt and Pepper to Taste
3 cloves Garlic diced
1 medium Onion diced
1 tbsp Butter
1/4 cup Fresh milk (optional)

Procedure:
Fry the burger patties until it turns brown. Set it aside.
In a frying pan, saute garlic and onions in butter until brown.
Add the button mushrooms, nestle cream, burger patties and salt and pepper to taste.
Mix them altogether until the cream is thick.
You may add fresh milk to make it saucy and creamier.

Hi everyone! It's been so long since I have posted on my blog, but now I have decided to open up a new one. This is dedicated to all the everyday dishes I have cooked and prepared. Most of them, I have done for the first time. I will post pictures and the recipes so you can also learn to prepare it too.

These dishes are from family's recipes and the rest are researched from the internet. But sometimes I don't use the ingredients I get from the net exactly, I add some spices to enhance its flavor. I also try to invent some on my own.
