Kare-kare by RiA

I'd like to share another recipe with you. A Filipino and tasty dish called "Kare-kare." I got this recipe from my sister. I tried this a few times already so I somehow managed to do it well. But even when the first time I did this, it was great.

These are the ingredients:
1/2 kilo beef/tripe cut into cubes
1/2 kilo oxtail, 2" long (optional)
8 cups of Water
4 tbsp Oil
1/8 cup Annato Seeds (atsuete)
2 pcs Onions
1 head Garlic
3 cups Peanut Butter
1/4 cup Ground Roasted Rice (or Rice Flour/All Purpose Flour)
4 pcs. Eggplant 1" thick
1 bundle Pechay
1 bundle Sitaw, 2" long strips
1 Banana Bud
Salt or Patis to Taste

Procedure:
1. Boil beef tripe in water for an hour, 30-45 minutes in a pressure cooker or until tender. Strain and keep stock. Remove scums.
2. Put hot water in the annato seeds in a bowl let it stand until bright red in color. Discard the seeds.
3. Saute onions and garlic. Add stock, roasted rice or flour, beef tripe and/or oxtail and peanut butter.
4. Bring to boil and simmer for 15 minutes. Add salt/fish sauce to taste. Put in the annato / atsuete mix well.
5. Add vegetables with 2 minutes intervals: sitaw, eggplant, banana bud and pechay. 6. Cook for a few minutes. Don't over cook the vegetables.
7. Serve with bagoong and rice.
*If using rice flour, mix 1/2 of stock to flour and 1/2 to peanut butter prior to adding mixture.

In the original recipe of my sister, the annato seeds are heated in oil. But for me, I only put in a hot water until it turns bright red in color. It's up to you how red it would be. You can put it later than the veggies or before adding the veggies. This looks difficult to cook but it is pretty simple. I also don't usually measure the ingredients especially the peanut butter. I add just a few at first, then add more to my liking. I actually put a lot so it will taste good so don't stick so much to my measurements. I also don't use oxtail with my recipe, but it is up to you it you want it. I like beef tripe more because it has less scums and fats.
I hope you will try this and share with me the picture of it. Hope you will also like it the way I did it. Till my next dish! See yah!

Pork Steak Casserole by RiA

I'm back with another easy recipe for you. This is called pork steak casserole. I got this from my android phone application "recipes" The cooking preparation is so easy to do because it has few ingredients.

These are the ingredients:
Pork steaks
2 1/2 tsp. flour
1 can Cream of Mushroom Soup
1 cup Milk

Procedure:
Brown steaks well in frying pan. Remove meat. Add flour, soup and milk to frying pan and simmer a few minutes. Layer in casserole the steaks with salt and pepper. You can eliminate the salt also because the cream of mushroom soup is already salty. Top the meat with the soup mixture and bake at 350 degree F about 1 hour or until done.

You may add more milk or water if necessary. I also added some cheese when I reheated it. You can add veggies like carrots, white onions and potatoes during baking. Don't forget to share what you did here. Until my next dish! See yah!

Sticky Honey-Orange Chicken Wings by RiA

I'm back again after almost a year of not posting. I'm finally here again to share with you the recipes of some of the dishes I cooked and got from food magazines, internet and acquired from family. Some of them were invented and some were improved and revised. I will post the recipe I have shared through my FB almost a year now. When I posted it, many of my friends liked it. So I figured that I will share the recipe here. This dish is so delicious and very easy to make. I did this a couple of times after I discovered it. I got it from "Yummy Magazine" March 2011 issue. The first time I did this, I don't have an orange so I substituted a couple of calamansi and it was so good.

Here are the Ingredients:
FOR THE COATING
1 cup All purpose flour
1 teaspoon five-spice powder
1 teaspoon salt
1/4 teaspoon pepper
cooking oil, for deep frying
12 pieces chicken wings

FOR THE HONEY-ORANGE GLAZE
1 tablespoon oil
1 tablespoon ginger, sliced very thinly (or grated)
1 tablespoon grated orange zest (substitute: calamansi or lemon)
1/2 cup honey

PROCEDURE:
In a small bowl, mix together flour, five-spice powder, salt and pepper. Heat oil in a medium sauce pan. Coat wings well with the flour mixture and fry for 10 to 15 minutes or until parts turn golden brown. Remove from heat and drain on paper towel. TO make the honey-orange glaze: In a medium saucepan, heat oil on medium heat and saute ginger for 1 minute. Add grated orange peel (or the substitute) then add honey. Simmer for 2 to 3 minutes. Place wings in batches in the pan and toss to coat the wings with the glaze. Serve as desired.
This is a recommended recipes that I am sure you'll love. It has the sweetness and citrus flavor that blends in together with the ginger. Once it has been coated, it retains the crispiness of the chicken. So it is so good. Hope you'll try this and share it with me. Until my next dish! See yah!

Corned Beef and Cheese Rice Balls by RiA

I got this from Flavors Magazine. It looked so delicious in the picture and it was so easy to do. I had a little bit of problem at first because the rice I made was not so sticky and the original recipe calls for a cubed cheese and rolled into the corned beef. I made a solution for both the problems I had. I added more water in the rice to make it stickier and then cooked the corned beef and cheese together and then rolled in the rice.

Ingredients:
Cheese, Grated
Corned Beef
Rice, cooked
Eggs, beaten
Japanese Breadcrumbs
Cooking oil for deep frying

Procedure:
Cook the corned beef together with the grated cheese. Get a spoonful of corned beef and wrap with cooked rice. Roll on palms to make even balls. Place each rice ball on a tray liked with baking paper and freeze.
When ready to cook, heat oil in pan. While the rice balls are still in frozen state, dip in beaten eggs and roll in Japanese Breadcrumbs. Deep fry rice balls in hot oil until golden brown. You can dip this with garlic sauce or any dip you want.

I tasted sooo delicious and very filling because of the rice. You can use other mixture inside and be inventive. Until my next dish! See yah!

Ham Curry Rice by RiA

I got this recipe from "Flavors" magazine and I tried it for the first time. It went well though I added a bunch of curry powder so it tasted a bit spicy. But it was so yummy so I will share the recipe to you:

Ingredients:
Cooking oil
Curry Powder
Cumin
Coconut Cream
Cooked Rice
Green Peas
Sweetened Ham, cut into cubes
Salt and Pepper to Taste

Procedure:
Heat oil in wok. Add curry powder, nutmeg, cumin and coconut cream. Mix well.
Add cooked rice, green peas and cubed ham. Toss well to combine ingredients. Season with salt and pepper. Transfer to serving dish and garnish with cilantro leaves. Serve.

I did not put on the measurements because it is up to your taste. Just a pinch at first will do, then if it doesn't taste right then add a bit more until it is good for you.
I partnered this dish with fatless tocino which is sweet so it contradicts the spiciness of the rice. Until my next dish! See yah!

Deviled Eggs by RiA

It's been a while since I have posted here, now I am back to share the recipes I have cooked and prepared.

Here are the ingredients:
Large Hard Boiled Eggs
2 tablespoon Mayo or Salad Dressing
1/2 teaspoon Prepared Mustard
1 each - Dash of Pepper

Procedure:
Cut eggs lengthwise into halves. Slip out yolks and mash with fork. Mix in remaining ingredients. Fill each egg with yolk mixture.

Hope you can try this, but not too much because it is high in cholesterol. Let me know what you think and share it you have also tried it. Until my next dish! See yah!

Pork Chop Spaghetti by RiA

I'm here again for another dish to share with you. This time, a twist of spaghetti which is called pork chop spaghetti. This was the first time I got to cook this and it went very well. I just had a bit problem with the pork, I think I should cook it longer so it will be softer. I got this recipe from my android phone application "recipe". You can also check it out here. These are the ingredients for this recipe:

Ingredients:

1 tbsp · butter
6 shoulder pork chops -- 1/2 inch thick
¼ cup · onion -- chopped
1 can · (15 oz.) tomato sauce
1 spaghetti sauce, packet -- 1 1/2 oz.
¾ to 1 cup water
½ cup · grated parmesan cheese
¼ packages · spaghetti (8 oz.)
1 cup · mozzarella cheese -- shredded
1/4 cup sugar (optional)
1/2 cup ketchup (optional)

Procedure:
Melt butter in electric skillet. Add pork chops and brown slowly on both sides.
Remove from skillet; add onion and saute until tender. Add tomato sauce, spaghetti sauce mix and water. Mix well.
Reduce heat to low; return pork chops to skillet, cover and simmer 45 to 55 minutes or until tender. If sauce is too thick, add more water.
Stir parmesan cheese into cooked sauce.
Meanwhile, prepare spaghetti according to package directions; drain and arrange spaghetti and chops on serving platter. Spoon sauce over all. Sprinkle mozzarella cheese over pork chops. Serves 6.

For this recipe, I failed to add in the mozzarella so instead, I used grated Parmesan cheese on top. I also added sugar and ketchup to make it "a pinoy style" spaghetti. It is up to you how you like your spaghetti. If you want a more Italian taste, add more tomato sauce and don't add the sugar.

You can add garlic bread as your side dish for a complete meal. I will add more pasta dishes soon. Don't be afraid to try new recipes instead of the usual. Until my next dish! See yah!

Spinach and Tuna Pasta by RiA

I got this recipe from allthecooks.com but the original recipe had just the spinach, since I have canned tuna left here at home, I decided to add it on this dish. It tasted so good! I'd like to share this with you.

These are the ingredients:
226 gr. - pasta noodles (supposedly fettuccine noodles but I used the spiral one),
226 gr - fresh spinach
1tbsp - garlic salt (mash garlic with salt)
1 cup heavy cream
1/4 cup grated parmesan cheese
2 can tuna flakes
pinch of nutmeg (optional)

Procedure:
Cook the pasta noodles (fettuccine or spiral) to a boiling water for 10 minutes or until the pasta is a little bit soft, drain. In a pan, stir-fry the tuna flakes until cooked, add in the garlic salt, heavy cream, nutmeg then mix the pasta and the fresh spinach. Sprinkle parmesan cheese on top.

This dish is very delicious and nutritious too because it has vegetables and tuna. This is good for those who are on a diet.

You can partner it with a garlic bread. Just toss a pan bread with a garlic mixture: heat the butter for a short time, just until it melted, put in minced garlic, salt and pepper and basil leaves.

Hope you can try this and share it with me via a comment. Until my next dish! See yah!

Ground Beef Enchiladas by RiA

I got this recipe from allthecooks.com and since I have pizza dough left in our fridge, I used it instead of tacos or tortillas that is in the original recipe.

Here are the ingredients for this delicious dish:
2 lb. Ground Beef
1/4 cup onion
1 garlic clove mashed with
1/2 teaspoon salt or garlic salt
1/2 shredded carrot (1/2 to 1 cup)
1/4 cup water
2 tablespoon flour
1/4 teaspoon oregano
1/4 teaspoon cumin
1 teaspoon instant bouillon

Procedure:
Brown meat in frying pan. Add garlic, onion, carrot, oregano, cumin and instant bouillon. Stir until blended. Sprinkle flour on top. Stir in. Simmer until meat and carrots are tender.
I used pizza dough as the tortilla. I cut them in 4 and then filled them with the meat filling, rolled up tightly. Then bake in the oven for about 20 minutes or until brown.

If you want, you can also do other procedures for this:
For Tacos: Cook tortillas in hot oil, few minutes each side. Fold in 1/2. Drain on paper towels. Fill each taco with spoonful of taco meat. May use prepared shells.
For Enchiladas: Fill softened tortillas with meat filling and shredded jack cheese. Bake about 20 minutes.
For Chimichangas: Fill flour tortillas with meat filling, cheese and refried beans. Roll up tightly. Be sure to fold edges and sides. Fry in hot oil for a few minutes on each side until lightly browned. Top with salsa and sour cream.
For Burritos:Fill flour tortillas with refried beans, meat filling and cheese and roll up. Warm in microwave to melt cheese and heat through. Add desired toppings.
You can add a dip for it like I did. Just add mayo, ketchup, salt and pepper and milk or you can just eat it that way. This can be a substitute for a meal because of the dough, which is very filling. You can also use it as a side dish for a soup.

Try this out for yourself. Until my next dish. See yah!

Chicken Teriyaki Kabobs by RiA

I got this delicious recipe from the application "recipe" on my android phone. I did the exact ingredients for the marinade but I added the tomatoes so it would be more filling.

Here are the ingredients for this dish:
680 gr chicken breasts, skinned and boned
White Onions, cut into 1 inch length
Tomatoes, cut into wedges
Marinate:
1/2 cup Soy Sauce
2 tablespoon Sugar
1 teaspoon Oil
1 teaspoon Minced fresh ginger root
1 clove garlic, minced

Procedure:
Cut chicken into 1 1/2 inches square pieces. Thread each of eight 6 inches bamboo or metal skewers alternately with chicken, white onion pieces (spear onion slices through side, not lengthwise) and tomatoes. Place skewers in shallow pan. Combine soy sauce, sugar, oil, ginger and garlic; pour over skewers and brush chicken thoroughly with sauce. Marinate 30 minutes. Reserving marinade, place on rack of broiler pan. Turn over and brush with reserved marinade until the chicken is tender.

You may also add fruits like pineapple or vegetables like bell pepper. You also can remove the chicken, tomatoes and onion and place them in the broiler if you are not comfortable in the skewers and to cook all of them easily. One problem with this dish is when it is in the skewers, the chicken may not be cooked entirely but the vegetables are well cooked already.

Hope you'll like it and try it for yourself. That's it for now. Until my next dish. See you soon!

Fried Liver Dumplings by RiA

I got this recipe from the recipe application on my android phone. But I did not copy the exact recipe procedure. The original name of this is Liver Dumplings but because I fried it, I called this dish Fried Liver Dumplings.

Here are the ingredients and procedure on how to make this:
slices of dry bread
1/4 kilo beef liver - ground
3 large onion - finely chopped
3 eggs
1 tbsp salt
1 tbsp pepper
1 tbsp teaspoon nutmeg
1 tbsp thyme
1/2 cup bread crumbs
1/2 cup flour
Cooking Oil
Mayonnaise (optional)

Procedure:
Soak bread in water. Squeeze dry; crumble into bowl. Combine liver, onion, egg, seasonings, crumbs and flour with bread; blend thoroughly.
Form the mixture into oblong or circle shapes using a spoon. Dip fry into a frying pan with cooking oil. You may add mayonnaise on top for garnish.

The original recipe is boiled into water, mine is a little different but so delicious. You can invent the sauce for this dish. You can add garlic, salt and pepper and milk to the mayonnaise to serve as a dip.

Hope you'll like it and try it for yourself. That's it for now. Until my next dish. See you soon!

Pancit by RiA

This is a famous dish for the Filipinos. I got this from our family's recipes but sadly I forgot to put the liver which would taste better. These are the ingredients for Pansit:
Pansit Bihon
Carrots
Baguio Beans
Cabbage
Pork
Chicken Balls
Soy Sauce
Salt and Pepper
Shrimp Stock
Pork Stock
Oyster Sauce (optional)
Cooking Oil
Onion and Garlic

Procedure:
Saute the onion and garlic, add in the pork (and/or liver) until it is soft and tender. Add in the rest of the vegetables and the salt and pepper. Then pour the shrimp and pork stock then the pansit bihon. Mix the soy sauce and the oyster sauce. Let it simmer for a few minutes and then it is done.

I didn't put on the measurements because it would depend on you. The more ingredients you have, the more it will taste good. I've put some oyster sauce to make it a bit sweeter. You can also add liver and sitcharo (instead of baguio beans). You can cook this for special occasions like birthday because they say that it will give you a long life. :D

That's it for now. Until my next dish. See you soon!

Tortang Talong by RiA

This has been a family's recipe for a long time. I guess many of you already know how to cook this. To those who don't know it yet, I will share the recipe with you.

Here are the ingredients:
5-6 Medium to Large Eggplants
1/4 Kilo Ground Pork
3 Medium Carrots diced
3 Large Potatoes, diced
2-3 Beaten Eggs
Onion and Garlic
Salt and Pepper to taste
Cooking Oil

Procedure:
Grill the eggplants until it is cooked and soft enough to peel its skin. After you peel the skin, mash it with fork making it in a circular / oblong shape. Set it aside.
For the mixture, saute garlic and onions, then add the ground pork. Cook the pork for about 30 minutes or until it turns brown. Add in the carrots, potatoes and salt and pepper. Set it aside.
Get your mashed eggplants and add the mixture, one eggplant at a time. Put it in a plate so you can arrange it beautifully. Put the beaten eggs, enough to cover the whole eggplant. Then fry it.

If you noticed it, it takes a while to be able to prepare it because of the processes you have to do. But once you get the hang of it, it is quite easy. For the sauce you can add for this dish is soy sauce and calamansi. But for me, I love the japanese mayo and ketchup to go with it. :))

Hope you'll like it and try it for yourself. That's it for now. Until my next dish. See you soon!

Burgersteak by RiA

This is the very first dish that I will share with you. I have cooked just a few times when I was younger but it was once in a blue moon. :)) Now that I am obliged to cook everyday here at home, I will share the food I have done and prepared for the first time. This recipe was done by my late uncle. It was now my turn to do it.

This is a simple creamy Burger Steak. Here are the ingredients:
2-3 packs of Burger Patties (seasoned and prepared)
1 can of Button Mushrooms
2 cans of Nestle Cream
Salt and Pepper to Taste
3 cloves Garlic diced
1 medium Onion diced
1 tbsp Butter
1/4 cup Fresh milk (optional)

Procedure:
Fry the burger patties until it turns brown. Set it aside.
In a frying pan, saute garlic and onions in butter until brown.
Add the button mushrooms, nestle cream, burger patties and salt and pepper to taste.
Mix them altogether until the cream is thick.
You may add fresh milk to make it saucy and creamier.

This dish is very easy to make. It also tastes so good. You can add mixed vegetables as your side dish. If you also happened to make this recipe, don't hesitate to share your secret too. That's it for now. until my next dish. See you soon!
